Fresh ginger is simmered with monkfruit sweetener and water to make a natural ginger syrup. It is then combined with carbonated water to make a healthy, natural and refreshing drink.
What's monkfruit erythritol blend and why do you use it to make this ginger ale recipe?
Monkfruit and erythritol is a blended sweetener that has 0 carbs, 0 calories and sugar free. Some popular brands I use are Lakanto Monkfruit and WholeEarth.
Should I peel the skin of the ginger to make ginger ale?
It's not necessary to remove the skin of the ginger but if you prefer, you may do so. It doesn't affect the taste of the ginger syrup.

- Servings 4-6 glasses
Ingredients
- 2 Cups Water
- 2 Inch Ginger
- 1/3 Cup Monkfruit Erythritol Blend
- 1/8 tsp Salt
- 1/8 tsp Lime/Lemon Juice
- 8oz Carbonated Water
Directions
1) Gather all the ingredients.
2) Slice ginger and set aside.
3) Boil water in stove top pot. Once boiling, reduce heat to low simmer and add in diced ginger. Cover 7/8 way to leave a little room for evaporation and simmer for 30 minutes.
4) Strain the ginger and pour ginger juice into a holding bowl. Add Monkfruit Erythritol Blend and salt into the ginger juice and stir well until Monkfruit Erythritol Blend fully dissolves.
5) Transfer the ginger juice base into the freezer for 30 minutes. Note – you can place in the fridge as well, but will require 3-4 hours to cool.
6) After 30 minutes, remove ginger juice base from freezer. To make the ginger ale, use 1 part ginger ale base to 2-3 parts carbonated water and adjust to liking. Top with a squeeze of lime/lemon.
